What Makes a Great Work Lunch (in my opinion)
Must be non-fussy. This means that it’s good-to-go all in one container, no need to store dressings or sauces separately, is fairly spill-proof (soups are out).
Must be quick and easy to make and meal prep in advance. Let’s face it, if it’s not quick and easy, you’re not going to attempt it. Almost all of these recipes are ready in 30 minutes or less, one skillet or one sheet pan, and you can do it on the weekend and then have planned leftovers.
Must not need fancy storage or reheating situations. As long as your workplace has a fridge, you’re fine. A microwave is better but if you don’t have one, take it out of the fridge a half hour or so before you plan to eat it, and while hot is better, room temperature works. We’re back to non-fussy.
Must have protein and vegetables, and some carbs. But not be carb-heavy. Sandwiches, bread, and pasta - nope, not these. You don’t want to start falling asleep at 2PM from your carb crash do you?
