These beef meatballs are richly seasoned with Madras curry powder, garam masala, ginger, coriander, cumin, and more. They’re juicy, tender, and pack a whollop of Indian flavors in every succulent bite.
So if you’re on a protein journey, they’re perfect. And my High Protein Recipes book is also a great resource!

Then there’s the homemade red curry sauce that has so many fragrant and rich dried spices in it, along with dried chili peppers, diced tomatoes, lime, cilantro, and plenty more. It’s intensely flavored, spicy without being too hot (although you can make it hot 🌶️), and is just divine drizzled over rice.
🎯 Tip: Feel free to use the ground protein of your choice for the meatballs: beef, pork, chicken, or turkey all work.
Or….
🎯 Tip: Use frozen meatballs as a hack to omit making meatballs if you prefer. Thaw them and add them directly to your already simmer red curry. You can skip the baking step since they’ve already been cooked. For recipe’s like this, Trader Joe’s frozen turkey meatballs (they also have frozen beef meatballs) are a great option or your favorite frozen meatballs (Costco, Sam’s, grocery store, etc).
I’m always a fan of kitchen shortcuts!
